A hearty and comforting soup featuring smoked kielbasa, tangy sauerkraut, and creamy potatoes simmered in a savory broth—perfect for chilly evenings.

Ingredients

  • 12 oz kielbasa, sliced into bite-sized rounds
  • 1 cup sauerkraut, drained
  • 2 medium-sized potatoes, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 12 bay leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh dill (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat.
  2. Add the sliced kielbasa and sauté until lightly browned, about 5 minutes. Remove and set aside.
  3. In the same pot, add the diced onion and sauté until soft, about 3 minutes. Stir in the minced garlic and cook for another minute.
  4. Add the diced potatoes, sliced carrots, and chicken broth to the pot. Bring to a boil, then reduce the heat to a simmer.
  5. Return the kielbasa to the pot, along with the sauerkraut and bay leaf. Stir to combine.
  6. Simmer the soup until the potatoes are tender, about 25-30 minutes.
  7. Season with salt and pepper to taste. Remove the bay leaf before serving.
  8. Optional: Sprinkle with fresh dill for a burst of flavor.

Notes

For a less tangy flavor, rinse the sauerkraut before adding it to the pot. This soup tastes even better the next day, so feel free to make it ahead of time.
