  • 4 cups peeled and diced russet potatoes
  • 1 diced onion
  • 2 diced carrots
  • 2 chopped celery stalks
  • 2 cloves minced garlic
  • 4 cups chicken or beef broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons flour
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: shredded cheddar cheese for topping
  • Optional: chopped parsley for garnish

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add 2 tablespoons of butter and let it melt.
  2. Add 1 pound of ground beef to the pot. Cook, stirring occasionally, until browned and no longer pink (about 5-7 minutes). Drain excess grease if necessary and set the beef aside.
  3. In the same pot, add 1 diced onion, 2 diced carrots, and 2 chopped celery stalks. SautΓ© until the vegetables are softened, about 5 minutes. Add 2 cloves of minced garlic and cook for another minute.
  4. Sprinkle 2 tablespoons of flour over the vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
  5. Gradually add 4 cups of chicken or beef broth, stirring constantly to prevent lumps. Scrape the bottom of the pot to release any browned bits for extra flavor.
  6. Add 4 cups of peeled and diced potatoes. Bring the soup to a boil, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the potatoes are fork-tender.
  7. Return the cooked ground beef to the pot. Stir in 2 cups of whole milk and 1 cup of heavy cream. Let the soup warm through, but avoid boiling to prevent curdling.
  8. Season the soup with salt and pepper to taste. Serve hot, garnished with shredded cheddar cheese and chopped parsley if desired.
