  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) vegetable oil
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Cream Cheese Frosting:
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (57g) unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray. Line with parchment paper if desired.
  2. Grate the carrots finely using a box grater or food processor and set aside.
  3. In a large mixing bowl, whisk together the dry ingredients: flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until well blended.
  4. In a separate bowl, combine the wet ingredients: vegetable oil, eggs, and vanilla extract. Whisk until smooth and glossy.
  5. Slowly pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Do not overmix; a few lumps are okay.
  6. Fold in the grated carrots and optional nuts gently until incorporated.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Check at 50 minutes to avoid overbaking.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before frosting.
  10. To make the cream cheese frosting, beat together the softened cream cheese and butter until smooth and fluffy.
  11. Gradually add powdered sugar, vanilla extract, and a pinch of salt, beating until creamy and spreadable.
  12. Once the bread is fully cooled, spread the cream cheese frosting evenly over the top.
  13. Slice, serve, and enjoy!

Notes

Use room temperature eggs and softened cream cheese and butter for best mixing results. If frosting is too soft, chill for 10-15 minutes before spreading. Tent bread with foil if browning too fast.
