  • 1 wheel of Brie cheese (8 ounces / 225 grams)
  • 1 cup fresh or frozen cranberries (about 100 grams)
  • 1/4 cup pecans (about 30 grams), toasted
  • 2 tablespoons honey
  • 1 tablespoon orange zest
  • 1/4 cup water
  • 1 teaspoon fresh lemon juice
  • Optional: pinch of ground cinnamon or nutmeg
  • Crackers or sliced baguette for serving

Instructions

  1. Toast the pecans: Heat a dry skillet over medium heat. Add the pecans and toast, stirring frequently, for about 3-5 minutes until fragrant and lightly browned. Transfer to a plate and let cool.
  2. Prepare the cranberry topping: In a small saucepan, combine cranberries, water, honey, orange zest, and lemon juice. Bring to a gentle simmer over medium heat. Cook for 8-10 minutes, stirring occasionally, until cranberries pop and the mixture thickens slightly. If using, add a pinch of cinnamon or nutmeg in the last minute. Remove from heat and let cool slightly.
  3. Prep the Brie: Preheat your oven to 350°F (175°C). If you like, lightly score the top of the Brie in a crisscross pattern to help it melt evenly (optional). Place the Brie wheel in your baking dish or cast iron skillet.
  4. Assemble and bake: Spoon the warm cranberry mixture evenly over the top of the Brie. Sprinkle the toasted pecans on top. Bake in the preheated oven for 12-15 minutes, or until the Brie is soft and gooey but not completely melted through.
  5. Serve immediately: Transfer the baked Brie to a serving board or platter. Serve warm with crackers or baguette slices for scooping.

Notes

Keep an eye on the Brie while baking to avoid overbaking; it should be soft and jiggly but not runny. Toast pecans to enhance flavor and crunch. Cranberry topping can be made a day ahead and reheated gently. For vegan version, use plant-based Brie and maple syrup instead of honey.
