This comforting lasagna soup combines the rich flavors of traditional lasagna with the ease of a one-pot soup, perfect for busy weeknights or casual family dinners.

  • 1 pound Italian sausage (mild, sweet, or spicy—your choice!)
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 6 cups chicken or vegetable broth
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons sugar
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Freshly grated Parmesan cheese
  • Fresh basil leaves, chopped (optional)

Instructions

  1. Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook for 5-7 minutes, or until browned and fully cooked. Remove excess grease if necessary.
  2. Add the diced onion to the pot and sauté for 3-4 minutes, until softened. Stir in the minced garlic, dried oregano, basil, and red pepper flakes. Cook for another minute, until fragrant.
  3. Pour in the chicken or vegetable broth, crushed tomatoes, and tomato paste. Stir everything together and add the sugar to balance the acidity. Bring the mixture to a gentle boil over medium-high heat.
  4. Reduce the heat to medium-low and add the broken lasagna noodles. Let the soup simmer for 15-20 minutes, stirring occasionally to prevent the noodles from sticking to the bottom of the pot.
  5. Check the noodles for doneness (they should be tender but not mushy). If the soup looks too thick, add an extra half cup of broth or water to thin it out.
  6. Remove the pot from the heat and let it cool for a few minutes. Taste and adjust the seasoning with salt and pepper if needed.
  7. To serve, ladle the soup into bowls. Top each serving with a generous dollop of ricotta cheese, a sprinkle of shredded mozzarella, and freshly grated Parmesan. Finish with chopped basil for a burst of color and flavor.

Notes

For best results, cook the noodles separately if making ahead to prevent them from soaking up too much liquid. Adjust the consistency by adding more broth or water if needed.
