A warm bowl of chicken and dumplings with creamy broth, tender chicken, and pillowy dumplings—perfect comfort food for chilly evenings.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 2 large carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1/4 cup flour
  • 1 cup milk
  • 1 tablespoon baking powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat a large pot or Dutch oven over medium heat, add oil, and sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  2. Melt butter in the same pot and add diced onion, garlic, carrots, and celery. Cook for 5 minutes or until softened.
  3. Stir in the flour, coating the veggies evenly. Cook for 1-2 minutes to eliminate the raw flour taste.
  4. Gradually whisk in the chicken broth and milk. Bring the mixture to a gentle boil, then reduce to a simmer.
  5. Shred the cooked chicken into bite-sized pieces using two forks.
  6. Return the shredded chicken to the pot and let it simmer for 10 minutes.
  7. In a mixing bowl, combine flour, baking powder, milk, and a pinch of salt to prepare the dumplings. Stir until a thick batter forms.
  8. Drop spoonfuls of the batter into the simmering pot, spacing them apart. Cover and cook for 15 minutes without lifting the lid.
  9. Check the dumplings for doneness (they should be firm and fluffy). Garnish with fresh parsley if desired, and serve warm.

Notes

For fluffier dumplings, avoid overmixing the batter. Use fresh ingredients for better flavor. Simmer gently to cook dumplings evenly.
