A creamy, cheesy, and crispy potato casserole that’s perfect for potlucks, holiday dinners, or cozy family meals.

  • 1 package (32 oz) frozen shredded hash browns, thawed
  • 1 cup sour cream (full-fat)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup butter, melted and divided
  • 2 cups crushed cornflakes
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a large mixing bowl, combine the thawed hash browns, sour cream, cream of chicken soup, shredded cheddar cheese, diced onion, and half of the melted butter. Mix until well incorporated.
  3. Season with salt and pepper to taste. Start with 1 teaspoon of salt and Β½ teaspoon of pepper, then adjust as needed.
  4. Pour the potato mixture into a greased 9×13-inch baking dish and spread it out evenly with a spatula.
  5. In a separate bowl, mix the crushed cornflakes with the remaining melted butter. Sprinkle this topping evenly over the potato mixture.
  6. Bake uncovered for 40-45 minutes, or until the top is golden brown and the potatoes are bubbly.
  7. Remove the casserole from the oven and let it cool for 5-10 minutes before serving.

Notes

Thaw hash browns completely and pat dry to avoid a watery dish. Add extra cheese on top for a gooey finish. Cover loosely with foil if the topping browns too quickly.
