  • ½ cup (100g) granulated sugar
  • ½ cup (110g) packed brown sugar
  • ½ cup (115g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup + 2 tablespoons (130g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Optional: a few tablespoons granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat ½ cup softened unsalted butter, ½ cup granulated sugar, and ½ cup packed brown sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in 1 cup peanut butter, 1 large egg, and 1 teaspoon vanilla extract until fully combined.
  4. In a separate bowl, mix 1 cup + 2 tablespoons all-purpose flour, ½ teaspoon baking soda, and ¼ teaspoon salt together.
  5. Gradually add the dry mixture to the wet bowl and stir just until incorporated. Do not overmix.
  6. Cover the dough with plastic wrap and chill in the fridge for 15-20 minutes.
  7. Using a medium cookie scoop or spoon, scoop out dough balls (about 1.5 tablespoons or 30g each). Roll them lightly in granulated sugar, then place 2 inches apart on the baking sheets.
  8. Use a fork to press the dough balls into a crisscross pattern.
  9. Bake for 10-12 minutes until edges are golden and crisp but centers look slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
