Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • Optional: 1/2 cup chopped dark chocolate or mini chips
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cornstarch, baking soda, and salt until well combined.
  3. In a large bowl, beat melted butter, brown sugar, and granulated sugar until smooth and glossy, about 2 minutes.
  4. Beat in the egg, egg yolk, and vanilla extract until fully combined.
  5. Add the dry ingredients to the wet ingredients and mix on low until just combined. Do not overmix.
  6. Fold in chocolate chips and any optional mix-ins (chopped chocolate or nuts) with a spatula.
  7. Use a cookie scoop (about 2 tablespoons per cookie) to portion dough onto prepared sheets, leaving about 2 inches between cookies.
  8. Optional: Chill the dough balls for 10 minutes for extra gooey centers.
  9. Bake for 10-12 minutes, until edges are golden and centers are soft but set.
  10. Let cookies cool on the baking sheet for 3-5 minutes, then transfer to wire racks to cool completely.
  11. Serve warm for gooey centers or let cool for crisp edges. Store airtight at room temperature for up to 4 days.

Notes

For thicker cookies with gooey centers, chill dough balls for 10 minutes before baking. Rotate baking sheets halfway through for even browning. Use a kitchen scale for best results. Cookies can be made gluten-free or dairy-free with substitutions. Freeze dough balls for quick cookies anytime.
