  • 1 cup (200 g) light brown sugar
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) heavy cream
  • 1 tsp (5 ml) vanilla extract
  • 2 cups (200 g) toasted pecans
  • Pinch of salt

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat and set it aside.
  2. Melt 1 cup of unsalted butter in a heavy-bottomed saucepan over medium heat. Stir occasionally until the butter turns golden brown and smells nutty, about 5-7 minutes.
  3. Reduce the heat to medium-low and stir in 1 cup of light brown sugar and 1 cup of granulated sugar until dissolved.
  4. Gradually add 1/2 cup of heavy cream, stirring constantly. Be cautious as the mixture will bubble up.
  5. Attach a candy thermometer to the saucepan and cook the mixture until it reaches 238°F (114°C), or use the cold water test to check consistency.
  6. Remove the saucepan from heat and stir in 1 tsp of vanilla extract and a pinch of salt.
  7. Fold in 2 cups of toasted pecans until evenly coated.
  8. Drop spoonfuls of the mixture onto the prepared baking sheet and let them cool and set completely, about 30 minutes.
  9. Store leftovers in an airtight container at room temperature for up to one week.
