Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease your donut pan with butter or cooking spray.
  2. In a small saucepan, simmer 1 cup of apple cider over medium heat until it reduces to about 1/4 cup. Let it cool.
  3. In a large bowl, whisk together 2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, and 1/4 tsp salt.
  4. In another bowl, melt 1/4 cup unsalted butter and mix it with 1/2 cup brown sugar, 2 large eggs, 1 tsp vanilla extract, and the reduced apple cider.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep the donuts tender.
  6. Spoon the batter into the pan, filling each cavity about 3/4 full. Smooth the tops if needed.
  7. Bake for 10-12 minutes or until the donuts are golden brown and spring back when lightly touched.
  8. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.
  9. In a bowl, whisk together 1 cup powdered sugar and 3 tbsp apple cider until smooth. Dip each donut into the glaze and place it on the rack to set.
